I start my garden from seed every year, watching and encouraging their growth until they are big and strong enough for the ground.
A few acorns that I put in my fridge last fall were open when I looked at them in the begining of March.
I enjoy seeing the way ferns stretch out of the ground in the fall. At this young stage in life, they can be picked and boiled for a fiddlehead meal.
I keep a close eye for new growth on my indoor plants and enjoy watching them grow.
